A customer recently shared with us these tips on ways to use tomato powder:
"As a huge lover of all tomato products, I was skeptical of what a powdered tomato could do. This exceeded ALL expectations! I use it to thicken a homemade stew, soup, or spaghetti sauce. If I'm desperate for salsa and there are no decent tomatoes to be had, I thicken the salsa and add flavor with the powdered stuff. I have even made tomato juice - I had to spike it with added salt and lemon juice, but it was very good. I've made barbecue sauce. I've made a "sundried tomato" style of salad dressing. I've used it with taco seasoning to give a richer flavor to my taco meat... My kitchen will never be without it."

I have not used the tomato powder yet, but I use the pwdered eggs and butter consistantly. Once a can is opened, I keep it in he house. I live on the Gulf Coast in TX and I just don't open anything on the super-humid days [when the "ground" in my breezeway and kitchen are so wet, it is a safety hazard!] Otherwise, I've had no problems. I opened a milk yesterda which was several years old, and after sifting, it was just fine.
Now to get some tomato poweder out…

Lindaharper: I use desiccant bags for a lot of things. Augusta is very humid and I found out as soon as I open something that can absorb water humidity in air I throw a few desiccant bags in the container and close it right away.
Of course, you need to open and close the container as fast as you can and not let it open on the counter.
It works for me.

This tomato powder is also a great way to make pizza sauce. I use it to thicken prepared spaghetti sauce if I'm cooking for a crowd. Otherwise I'll just start from scratch using only the tomato powder. Add a bit of garlic and italian seasoning and voila!
It's much better than most prepared pizza sauces and very quick!

I wish we could use it here in the humid south. When I opened a can, within a few minutes, it was hard as a rock. I haven't been able to figure out how to use it without it getting so hard that you can't even measure it!
