Coffee Cake
Ingredients:
- 1 cup chopped walnuts or pecans
- 1 cup granulated sugar (divided)
- 1/2 cup brown sugar (packed)
- 2 1/4 cups all-purpose flour (divided)
- 2 teaspoons ground cinnamon (divided)
- 6 tablespoons cold butter (cut into pieces)
- 2/3 cup warm water
- 1/3 cup powdered coffee creamer
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup butter (softened)
- 1 large egg
Directions:
- Preheat oven to 375°F and prepare a nine-inch pan.
- Mix nuts, 1/2 cup granulated sugar, brown sugar, 1/4 cup flour, 1 teaspoon cinnamon, and cold butter together in a medium bowl until the ingredients become coarse crumbs. Set aside.
- Stir up the water and powdered coffee creamer in a small bowl until smooth. Set aside.
- In a large bowl, combine the remaining flour, remaining granulated sugar, baking powder, salt, remaining cinnamon, and softened butter.
- Stir in egg, then add water and powdered coffee creamer mixture.
- Pour half the batter into the pan, then sprinkle with half the crumb mixture. Repeat with the remaining batter and crumb mixture.
- Bake for 30 minutes, then let cool for 15 minutes before cutting and serving.

Coffee Cookies
Ingredients:
- 1 cup cold espresso or coffee
- 1 teaspoon baking soda
- 3 1/2 cups all-purpose flour
- A dash of salt
- 2 teaspoons baking powder
- 2 cups brown sugar
- 1 cup shortening
- 2 eggs
- 1 teaspoon vanilla extract
- 3 tablespoons powdered coffee creamer
- 1 1/4 cups powdered sugar
Directions:
- Preheat oven to 360°F and prepare cookie sheet.
- Combine espresso or coffee with baking soda, then let stand.
- In a small bowl, mix flour, salt, and baking powder. In a large bowl, cream brown sugar and shortening.
- Blend egg and vanilla into creamed brown sugar and shortening mixture. Add in espresso or coffee mixture, then slowly add in flour mixture.
- Place each spoonful onto a cookie sheet, then bake for 8-10 minutes. Let cool, then add icing.
- To make icing, mix reconstituted powdered coffee creamer with powdered sugar until creamy.

Instant Oatmeal Packets
Ingredients:
- 10 cups quick oats (divided)
- 2 teaspoons salt
- 1-2 cups brown sugar
- 1 cup powdered coffee creamer
- Small, zippered plastic bags
Directions:
- Pour 7 cups of oats into a large bowl. Set aside.
- Pour 3 cups of oats into a blender and blend until powdered. Add blended oats to bowl of remaining oats.
- Mix in salt, brown sugar, and powdered coffee creamer. Mix well.
- Divide the mixture into individual “packets.” Scoop 1/2 cup into each plastic bag, making approximately 24 packets.
- To eat oatmeal, pour a packet into a bowl or mug, add 3/4 cup water, then microwave for 1-2 minutes.

Vegetable Omelet
Ingredients:
- Powdered eggs equivalent to 2-3 eggs
- 1 tablespoon butter
- 1/4 cup chopped onions
- 1/4 cup chopped spinach
- 1/4 cup diced bell peppers
- 1/4 cup mushroom slices
- 1/4 cup tomato chunks
- 2 tablespoons shredded cheddar cheese
- Salt and pepper
Directions:
- Heat 1/2 tablespoon butter in a pan or skillet over medium heat. Toss in vegetables and heat for 3-5 minutes. (If vegetables are freeze-dried, reconstitute with water first.)
- Remove vegetables from heat and set aside.
- Reconstitute and whisk eggs until frothy. Add salt and pepper, if desired.
- Add the remaining butter to a pan or skillet and heat over medium-low heat. Pour eggs in and spread evenly, then reduce heat to low.
- Once eggs are almost set, add vegetables and cheese to half the omelet. Slide a spatula under the other half, then fold.
- Move to a plate, then enjoy!
Egg Salad Sandwich
Ingredients:
- Powdered eggs equivalent to 4 eggs
- 2 green onions (minced)
- 3 tablespoons mayonnaise
- 1/4 teaspoon mustard powder
- Salt and pepper
- 4 slices of bread (with butter)
Directions:
- Rehydrate powdered eggs, scramble over heat, then break into small pieces. Mash in a bowl.
- Stir in green onions, mayonnaise, and mustard powder. Sprinkle with salt and pepper, if desired.
- Place in refrigerator and chill for at least half an hour, then spread onto bread to make sandwiches.
