Since I haven’t worked with the eggs yet, I am dying to try out what it’s like to bake with them like my mom use to years ago and also make new breakfast casseroles for my family.

Would love to try making an omelet both at home and camping. Egg, bell pepper red and green, onion and bacon. Also would like to try them making a Chili Relleno Casserole. I love making this in a cast iron skillet . 3 Eggs, 1 lb cheese,1 1.5 milk, .5 cup flour, 1 can green chiles. It can be baked in the oven or on a open fire.

I’ve had great results using the whole egg powder in baked goods by adding it to the dry ingredients and then adding additional water or other liquid, but I’ve never tried it in a quiche, and since reading this, I’m very interested in using it to make a Bacon and Zucchini Quiche.

I love challah bread but it is hard to find as it uses 12 eggs. I live in the high sierras and have to shop 3-4 times/year. Storage of any fresh items for that length of time is nigh to impossible so everything that can be stored must be. We’ve had in "good winters" snow over the tops of the corral fences and using crowbars to pry open the sliding doors which we’ve replaced after 8 feet of snow isolated us. So storable foods are LIFESAVERS.

Wow, reading everyone else’s posts has really made my mouth water. I’d try the peanut butter waffles first because I love waffles and I eat them with peanut butter (my husband thinks its wierd, but I like it).

I would love to try the whole powdered eggs in my recipies . I use lots of eggs in my cooking and you never know when you can’t get egg especially in an emergency like the tornados in Oaklahoma.
