Butter, Softened
2/3 C
Packed Brown Sugar
Eggs (4 Tbsp Whole Egg Powder + 6 Tbsp Water)

freeze-dried Banana Slices, reconstituted, drained, and mashed
1 tsp
Vanilla Extract or Vanilla Powder
3/4 C
All-Purpose Flour
1 1/3 C
Dehydrated Rolled Oats
1/4 tsp
1 tsp
Baking Soda
For Topping:

3/4 C
Rolled Oats
1/3 C
Packed Brown Sugar
2 Tbsp
Butter or Clarified Butter
2 Tbsp
Chopped Walnuts
1/2 tsp
Ground Cinnamon


1) Preheat oven to 350 F.
2) Whisk together flour, 1 1/3 cups oats, salt, and baking soda.
3) In a large bowl, cream ½ cup butter with brown sugar. Beat in eggs, then mashed bananas and vanilla.
4) Add the flour and oats mixture from Step 1 to the banana mixture in the large bowl. Mix well. Turn batter into a greased and floured 8-inch square pan.
5) For the topping, mix together the oats, brown sugar, butter, walnuts, and cinnamon and sprinkle evenly over the batter.
6) Bake at 350 F for 40-45 minutes. Transfer to a rack to cool.
