Emergency Essentials Mesh Black Pepper
1/2 C
Emergency Essentials Chopped Onions
1 Tsp
Emergency Essentials Iodized Salt
1 Large
Emergency Essentials Red Bell Pepper Dices

Canned Green Lima Beans, drained (or 1 jalapeno or other small hot pepper, frozen, thawed) seeded and diced
1/2 C
Emergency Essentials Vegetarian Chicken Flavored Broth
1 1/2 Tsp
Emergency Essentials Minced Garlic
2 Tbsp
Chopped fresh Cilantro
1 C
Yellow summer squash or Emergency Essentials Freeze-Dried Zucchini Slices chopped (optional)


  1. Reconstitute any dried ingredients
  2. Place large sauté pan on high heat until hot. Add 1 teaspoon oil, corn, peppers and onion, and cook, stirring often, until they begin to brown and caramelize slightly (about 5 to 7 minutes).
  3. Add remaining oil, squash, and seasonings. Cook 3 minutes on medium heat.
  4. Add broth and Lima beans and simmer until all vegetables are tender—about 5 minutes.
