Jamaican Rice & Beans Recipe

Dry Kidney Beans
1 C
Coconut Milk
Spring Fresh Thyme
1/8 C
Sliced Green Onion
Hot Red Chili Pepper, diced (or 1/2 tsp flaked hot red pepper)
1 tsp
minced garlic
1 tsp
sugar (optional)
1/2 tsp
salt (optional)
2 1/2 C
uncooked brown rice (can substitute white)


  1. Combine beans and coconut milk in a large saucepan. Add enough water to cover beans by one inch. Cook 2 hours on low heat, checking often to see if more water is needed.
  2. Stir in thyme, garlic, onion, salt, sugar, and 3 slices chili pepper. Simmer 7 minutes.
  3. Add rice and 4 ½ cups warm water. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes, or until all the liquid is absorbed and rice is tender. Garnish with rest of hot pepper slices if you like.
