Huckleberry Pie Recipe (6 to 8 servings)



Pastry for double crust 9-inch pie
1 C
Emergency Essentials White Sugar
6 C
Huckleberries, washed
1/4 C
packed Emergency Essentials Brown Sugar
1 tbsp
fresh-sqeezed Lemon Juice
1 tsp
Emergency Essentials Korintji Cinnamon
2 tbsp
Butter in small pieces
4 tbsp
quick-cooking tapioca
1 tbsp
Course Granulated Sugar ( or sanding sugar)


  1. If berries are frozen, thaw first and drain before using. Preheat oven to 425° F.
  2. Combine all filling ingredients and let stand for 15 minutes.
  3. Pour into crust, add top crust or lattice strips and sprinkle with coarse sugar.
  4. Bake for 35 to 40 minutes.
  5. Serve warm or at room temperature, with ice cream if desired.


Can’t get huckleberries? Substitute reconstituted Provident Pantry Freeze Dried Whole Blueberries and reduce sugar to 2/3 cup.
