I do a lot of camping with the BSA and keeping food cool is a problem, on long camping trips. The boys like funnel cake so I have been dehydrating eggs and using powdered milk to go in the mix. I like your way better.

I’ll make egg buns, sweet roll dough, poundcake, fried rice, scrambled eggs, french toast, custard pie, ciche, and many other things that call for fresh eggs. I love how they keep on the shelf, and are fresh when I need them.

I would sautéed two tablespoons chopped sweet onion and two tablespoon chopped fresh asparagus bits in margarine, add the powdered eggs for scrambled eggs, sprinkle two tablespoon cheese bits and cook in small skillet. Reconstituted dry onion bits and mushrooms pieces, and a sprinkle of powdered cheese, can be substituted in emergency situations.

The Provident Pantry whole egg powder could come in handy for making a breakfast casserole with the freeze-dried hash browns and cheese. I would also like to try the whole egg powder with bread pudding made from the pancake or biscuit products. Since I drink a lot of smoothies this would be a great way to get a little protein along with the powdered milk and fruit.

Let’s go minimalist. How about a dried whole egg- freeze dried sausage casserole with dried milk, onion and bell pepper chips, plus black pepper and salt to taste, all baked in a solar oven. Toss in some powdered cheddar cheese to boost flavor.

I’m thinking of an egg-browned sausage casserole, all from freeze-dried ingredients. This would include adding some dried milk, onion and red and green pepper flakes, in addition to some black pepper and salt to taste.
