First thing I’d like to make with the whole powdered eggs is a Dutch Apple Pancake. I’m curious if it would fluff up and bake up the sides of the pan like regular eggs do. The pancake makes a yummy breakfast that pleases everyone.

I would like to try a family recipe that always seems to warm everyone up and get the day started. The ingredients include eggs, milk, pancake mix, pork sausage, green onions, diced ham, diced tomatoes, sliced mushrooms, monterey jack cheese, salt and pepper. It is so good and filling.

I actually became aquainted with powder eggs when I was a teenager and my parents had to live off of welfare for a couple months while my stepfather healed from a back injury. They are quite tasty. I think they would be great in a breakfast cassarole, or an egg omlet…Yum

So far, I have had success with every freeze-dried and dehydrated product I have tried from Emergency Essentials. My family loves any kind of quiche, so I would like to try it with whole egg powder. And, since I already have freeze-dried green onions, dehydrated hashbrowns and sausage TVP, I would also like to try an old family favorite: Farmhouse Breakfast Bake (my mom’s recipe).

South Texas (over 60) Potato, Egg and Cheese Breakfast Taquitos

1 large russet potato with skin, cut into 1/2-inch chunks half an onion, chopped (OK the whole onion I love onion) 1 tablespoon olive oil 1/2 tablespoon Land O Lakes® Light Butter with Canola

4 eggs

1/2 cup shredded cheddar cheese Mrs Dash and pepper

2 large flour tortillas (I use Smart & Delicious™ Low Carb, High Fiber Tortillas)

Picante, (thick and chunky optional but recommended)

Put the potatoes in a pot and fill with enough water to cover them. Bring to a boil and cook until the potatoes are just beginning to soften, about 5-7 minutes. You don’t want them to cook all the way; they’ll finish cooking in the skillet. Drain and set aside.

Heat the oil in a medium skillet over medium heat; add the onions and sauté for 5 minutes, or until soft. Add the potatoes, salt and pepper and cook for another 5+ minutes, until the potatoes are cooked through and starting to get brown and crisp around the edges.

Now, melt the butter over medium heat throw in the eggs to the hot skillet and stir constantly, until all the eggs are scrambled. Season lightly with Mrs Dash

Heat the tortilla put the mixture on the tortilla, sprinkle cheese Picante to taste.

I actually use a microwave but found you have to practice since cooking varies in every one I have ever used. Can even be made over a campfire or and yes it is true an engine you really do not need much heat or time to make these and they are a meal in your hand and a great way to start the day.

When I was young, my Mother would make me an Egg Custard – absolutely delicious stuff. She passed away several years ago, but luckily my wife is a pretty good cook and afer a lot of cajoling I finally got my wife to make me some using my Mom’s old recipie. Would love to try these in all my baked goods, but especially my pancake recipes! Our family eats whole grain pancakes from different types of fresh ground flour every Saturday and would love to try the egg powder to know I can have every ingredient I need from food storage.

As I have never used Whole egg powder before, first I would make good, old scrambled eggs. Then I think I would try a quiche. Maybe salmon, potato and smoked Gouda. I make it with regular eggs and it would be interesting to compare the two.

I would like to first use to make scrambled eggs, if I can make them taste good I know I can make anything taste good. These would be great to take camping so to avoid bring breakable fresh eggs and are better on the go so to speak.
