Cornish Pasties Recipe

Cornish Pasties Recipe

Pastry Ingredients:

2 1/4 C
Emergency Essentials White Flour
Emergency Essentials Powdered Sugar
4 oz.
lard or shortening, cut in pieces, or equivalent Emergency Essentials Shortening Powder (follow instructions on the can)
Emergency Essentials Iodized Salt
egg yolk
3 oz.
cold unsalted butter, cut in pieces
cold water

  1. Stir flour, salt, and powdered sugar together in mixing bowl.
  2. Add butter and lard or shortening.
  3. Using a pastry blender or your fingers, cut the fats (butter, lard/shortening) into the flour mixture until it resembles fine crumbs.
  4. In a small bowl, whisk egg and water together and add to flour mixture. Mix quickly but thoroughly to make a dough. Knead briefly until pastry is smooth with no cracks—just enough to be able to roll it out without breaking. (If it cracks and breaks, add just a few drops of water and knead until smooth.)
  5. Press into a flattened disc shape, wrap in plastic, and chill in refrigerator for 30 minutes or overnight.
  6. Allow dough to soften slightly after removing from fridge, then place on a lightly-floured work surface and roll to a thickness of ¼ inch. Using a saucer or small plate, cut six 6-inch rounds. Scraps may be recombined and rolled out as needed.
  7. Stack with plastic or waxed paper between rounds, wrap and chill while preparing the filling.

Filling Ingredients:

10 oz.
Chuck steak, trimmed and cut into ¼-inch cubes (or reconstituted Emergency Essentials Freeze-Dried Roast Beef)
1 Small
Onion, finely chopped (or reconstituted Emergency Essentials Chopped Onions)
Carrot, in ¼-inch cubes (you may substitute ½ medium turnip, called “Swedes” in the Midwest, for half of the carrot if desired.) You can use Emergency Essentials Carrot Dices.
1 Small
Idaho potato, in ¼-inch cubes (or 2/3 cup reconstituted Emergency Essentials Potato Dices)
1½ TSP
Emergency Essentials Iodized salt
Mesh Black Pepper
Emergency Essentials White Flour
Egg, slightly beaten

  1. Preheat oven to 400° F.
  2. In mixing bowl, combine meat, vegetables, salt, and pepper. Sprinkle 1 tablespoon flour over top and toss together to mix.
  3. Set chilled pastry circles on a clean surface. Place about ½ cup filling on half of each circle.
