Cherry-Orange Cobbler Recipe



2 cups
Sweetened Tart Cherries
Enough water to just cover them in a medium saucepan
2/3 cup
½ teaspoon
2 tablespoons
frozen orange juice concentrate OR [Orange Drink] powder
2 tablespoons

1) Simmer cherries until fully reconstituted but not mushy. Add sugar and continue to cook. Add orange juice concentrate or drink powder and cinnamon; stir well. 2) Dissolve cornstarch in ¼ cup water and stir into cherry mixture. Cook until liquid is clear and syrupy. 3) Pour into a buttered or sprayed baking dish


Topping Mix:

Mix 1½ cups Biscuit Mix
¼ cup Sugar
1/3 to ½ cup Milk

to make a thick, sticky dough. Oil your fingers and pat dough into 2-inch patties. Place patties on top of cherry filling. Sprinkle lightly with [Cinnamon].

Bake cobbler at 400F for 20 minutes. Serve warm or cold. Variations:
1. Omit orange juice or powder and cinnamon. Add ¾ teaspoon almond extract.
2. Instead of cobbler mix, make a “Cherry Crisp” topping: Spread 1½ cups uncooked regular[Oatmeal] and 1 small package slivered almonds on a cookie sheet and toast under broiler until almonds just begin to turn golden. Mix with 2 tablespoons [Flour], ½ cup [Brown Sugar], and ½ cup melted [Butter]. Spoon mixture on top of cherry filling.
Bake at 350F for 25 minutes. Serve warm with ice cream if desired.
