Zucchini Raisin Cookies Recipe


1/2 C
Dehydrated Shortening Powder
1 tsp
Vanilla Extract
3/4 C
Egg (2 Tbsp Whole Egg Powder + 3 Tbsp Water)
1 C
All-Purpose White Flour
1/8 tsp
Baking Soda
1 tsp
Baking Powder
1 C
Rolled Oats
1/2 C
Chopped Pecans
1/2 C
Freeze Dried Zucchini
1/2 C
Freeze Dried Raisins


1. Preheat oven to 350°F. Grease cookie sheet.

2. In a large mixing bowl, cream together shortening, vanilla and honey. Beat in egg until well-blended.

3. Combine flour, baking soda, baking powder, and salt. Stir into honey mixture.

4. Stir in rolled oats, zucchini, pecans, and raisins. Drop by teaspoonfuls on greased cookie sheet, and flatten slightly using a fork.

5. Bake 10-12 minutes in preheated oven until browned. Remove from cookie sheet to cool on wire rack.
