Wheat Berry and Veggie Salad with Sesame Dressing Recipe

Ingredients for Salad:

1 Cup
Emergency Essentials Hard White Wheat
3 Cups
Water, salted
1/2 Cup
Emergency Essentials Freeze Dried Celery
1 Cup
Emergency Essentials Freeze Dried Peas
1/2 Cup
Emergency Essentials Freeze Dried Green Onions
1 tsp
Emergency Essentials Freeze Dried Minced Garlic


Optional: 1/2 Cup Emergency Essentials Freeze Dried Beef TVP or 1 Cup Emergency Essentials Freeze Dried Chicken Pieces.

For the Vinaigrette:

1/4 tsp
Emergency Essentials Black Pepper
1/4 tsp
Emergency Essentials Salt
2 tsp
Emergency Essentials Brown Sugar
1/4 tsp
Emergency Essentials Freeze Dried Minced Garlic
1/2 cup
Vegetable oil
2 TBS
Sesame Oil (or to taste)
3 - 4 TBS
Apple Cider Vinegar


DIRECTIONS:

  1. Bring 3 cups salted water to boil. Add hard white wheat and cook until tender. Strain and set aside.
  2. Reconstitute celery, peas, and green onions in water used to cook the wheat; drain.
  3. Combine all salad ingredients in a large bowl and set aside.
  4. In a small bowl, combine vinaigrette ingredients; mix well. Pour dressing over salad and toss.
  5. Serve immediately.
