Zucchini Pecan Quick Bread Recipe

Bread Flour
3/4 C
1 Tbsp
Baking Powder
1/2 tsp
Baking Soda
1/2 tsp
1/2 tsp
Eggs (4 Tbsp Whole Egg Powder + 6 Tbsp Water)
1/2 C
Vegetable Oil
1 1/2 C
Freeze Dried Zucchini, Shred after rehydrating
1/2 C
Chopped Ground Zest of 1 Large Orange


1. Preheat oven 350°F. Coat 9" x 5" x 3" loaf pan with vegetable spray.

2. In a large bowl, combine flour, sugar, baking powder, salt and cinnamon.

3. In a smaller bowl, whisk together eggs and oil; Stir in zucchini, pecans and orange zest.

4. Pour egg mixture into flour mixture and mix together by hand. This will be a stiff batter.

5. Spoon into prepared loaf pan and bake 50 minutes until a knife or toothpick comes out clean. Cool slightly before serving.
