Strawberry Oat Muffins Recipe

INGREDIENTS

Rolled Oats
1 C
Dehydrated Buttermilk Powder
1 C
All-Purpose Flour
1 tsp
Baking Powder
1 tsp
Baking Soda
1 tsp
Salt
1
Egg (2 Tbsp Whole Egg Powder + 4 Tbsp Water)
1/4 C
Vegetable Oil
3/4 C
Brown Sugar
1 tsp
Vanilla or Vanilla Powder
1 C
Freeze Dried Strawberry Slices

PREPARATION

1. Preheat oven 375°F. Grease and flour a muffin pan, or use a paper-liners.

2. In a small bowl, combine oats and buttermilk. Let stand 5 minutes. In a medium bowl, combine flour, baking powder, baking soda, and salt. Set aside.

3. In a large bowl, beat together egg, oil, brown sugar, and vanilla. Blend in an oat mixture. Stir in flour mixture, just until moistened. Fold in strawberries. Fill muffin tins 2/3-3/4 full,

4. Bake in preheated oven 15-20 minutes or until toothpick inserted comes out clean.
