Mango Muffins Recipe

INGREDIENTS

1 1/2 C
Freeze Dried Mango
1
Egg (2 Tbsp Whole Egg Powder + 3 Tbsp Water)
1/4 C
Vegetable Oil
3/4 C
Dehydrated Buttermilk Powder
1 1/4 tsp
Baking Powder
Pinch
Salt
3/4 C
Sugar
1/2 tsp
Ground Allspice
1 1/2 C
Flour
1 tsp
Vanilla or Vanilla Powder
1/4 - 1/2 C
Sweetened Coconut Flakes (as desired)

PREPARATION

1. Preheat oven to 375°F.

2. Grease muffin tins.

3. Reconstitute then drain water and mash mango into soft pulp.

4. In a small bowl using a whisk, mix egg with vegetable oil and buttermilk until well-blended.

5. In a large bowl, mix baking powder, salt, sugar, and ground allspice with flour.

6. Add egg, oil, and buttermilk mixture to flour to form a lumpy batter. DO NOT overmix.

7. Stir in vanilla, mashed mangos and coconut.

8. Spoon batter into muffin tins to about 2/3 full.

9. Bake for 22-24 minutes.
