A solid entry in the dessert lineup
Carrot cake is generally a safe bet, provided you don't ruin it by adding raisins. This, thankfully, has no raisins. Everyone liked it. It had orange things that I am assuming were carrot bits, and it had a good texture for something that can be stored for years. It may not raise to the level of, say, a Filled French Toast or Apple Turnover, I place it in the category of morale booster.
