Blueberry Oat Cookies Recipe

Butter or Margarine, Softened
1 C
Packed Brown Sugar
Egg (2 Tbsp Whole Egg Powder + 3 Tbsp Water)
1 tsp
Vanilla Extract
1 1/2 C
Quick Cooking Oats
1 C
2 tsp
Ground Cinnamon
1/2 tsp
1/2 tsp
Baking Soda
1/4 tsp
Baking Powder
1 C
Freeze Dried Blueberries


1. In mixing bowl, combine butter and brown sugar. Beat in eggs and vanilla.

2. Combine oats, flour, cinnamon, salt, baking powder, and baking soda; Gradually add to creamed mixture.

3. Stir in reconstituted blueberries.

4. Drop by heaping tablespoons 2" apart into lightly greased baking sheet.

5. Bake at 350°F for 12-14 minutes. Remove to wire rack to cool.
