Blueberry Coffee Cake Recipe

INGREDIENTS

Coffee Cake:
2 1/4 C
Flour
1 1/4 C
Sugar
1/2 C
Soft Butter
1/3 C
Dehydrated Fat-Free Milk
2
Eggs (4 Tbsp Whole Egg Powder + 6 Tbsp Water)
1 tsp
Vanilla Powder
1 C
Freeze Dried Blueberries
2 Tbsp
Flour
8 oz
Cream Cheese
1/2 tsp
Baking Soda
1/4 tsp
Salt
Topping:
3 Tbsp
Clarified Butter
1/2 C
Flour
1/2 C
Packed Brown Sugar
1 tsp
Cinnamon

PREPARATION

1. Preheat oven to 350°F.

2. In a large bowl, combine all coffee cake ingredients except for blueberries and 2 tablespoon flour, blend together until well-mixed.

3. Add blueberries that have been tossed with 2 tablespoon of flour.

4. Spread in a 9" x 13" pan.

5. For topping, mix all ingredients and sprinkle over batter.

6. Bake 40-55 minutes, let stand for 10 minutes and serve.
