Banana Raisin Cake Recipe

All-Purpose Flour
2 C
White Sugar
1 tsp
Baking Soda
1 tsp
Ground Cinnamon
1 tsp
2 C
Freeze Dried Banana Dices
1 C
Corn Oil
1 1/2 tsp
Vanilla Extract or Vanilla Powder
Eggs (6 Tbsp Whole Egg Powder + 1/2 Cup Water)
1 C
Freeze Dried Raisins
1/2 C
1/2 C
Chopped Walnuts


1. Rehydrate banana; Drain excess water.

2. Measure flour, sugar, baking soda, cinnamon, salt, and sift together.

3. Add banana to dry ingredients followed by oil, vanilla (or Vanilla Powder), eggs, raisins, water, and nuts.

4. Pour into a greased 10" tube pan.

5. Bake at 350°F for 1 1/2 hours or until done. Cool on rack before removing.

6. Cream cheese icing is optional.
