Shrimp Fritters with Spicy Honey Drizzle Recipe

INGREDIENTS

1 1/2 C
Freeze Dried Shrimp, reconstituted and drained
2-3 tbsp
Diced Green Onions, reconstituted and drained
1 tsp
Black Pepper
1 1/2 C
Water
1 1/2 C
Flour
1 tbsp
Butter
1/2 tsp
Black Pepper
2 eggs
Freeze Dried Whole Egg, reconstituted with 4 tbsp. powder to 6 tbsp. warm water
1 tbsp
Freeze Dried Egg Whites, reconstituted with 2 tbps. warm water

Oil for frying - peanut and canola oil are the most often recommended, as they have mild taste and high smoking point. Extra-virgin olive oil is not recommended for deep frying, as it has too low a smoking point (about 320 F), but "light" olive oil performs well. Frying foods in oil that has not reached the right temperature causes them to absorb more oil and taste greasy.

DIRECTIONS:

  1. Heat oil to 350 F in skillet or heavy-duty pot. (If you don't have a thermometer, put a kernel of popcorn into the oil - it will pop at about the desired temperature!) Regulate the heat carefully so that the oil doesn't overheat and begin to smoke.
  2. Reconstitute shrimp and green onions. Drain.
  3. Mix shrimp, green onions, and garlic and set aside.
  4. Heat water in a medium-sized pot, adding butter as it heats.
  5. When water reaches a boil, add flour all at once and stir with a wooden spoon over medium heat for 3 minutes.
  6. Place hot dough in the bowl of a stand mixer and use paddle attachments to work it to allow steam to escape. (If you don't have a stand mixer, continue working it with the wooden spoon.)
  7. When most of the steam is gone, add eggs and egg whites, a bit at a time, scraping bowl sides after each addition.
  8. Fold shrimp-onion-garlic mixture and black pepper into the dough until fully incorporated.
  9. Drop by tablespoons into the hot oil and fry until golden, turning once if necessary, and not crowding fitters - about 4 to 6 minutes.
  10. Drain on a paper towel and serve while hot, with Spicy Honey Drizzle

  11. Spicy Honey Drizzle: Combine 2/3 cup honey with 2 tablespoons fresh chili sauce and sea salt to taste - OR combine honey with a dash of salt, 1 tablespoon hot sauce, and 1/2 teaspoon (or more, if you like it hot) flaked chili peppers.
