Reduced Fat Apple Oat Muffins Recipe

Freeze Dried Apple Dices
3/4 C
All-Purpose Flour
1/4 C
Whole Wheat Flour
1 1/4 tsp
Baking Powder
1/2 tsp
Baking Soda
1/8 tsp
2/3 C
Vegetable Oil
1 tsp
1 C
Nonfat Buttermilk
1 C
Rolled Oats


1. Preheat oven to 375°F.

2. Line 12 cup tins with liners or spray.

3. If using fresh apples, peel first then grate with large grater. Squeeze out moisture and set aside.

4. Combine flours and dry ingredients, except oats.

5. Add wet ingredients and stir.

6. Stir in apples and oats.

7. Fill each cup about 2/3 full.

8. Bake until golden brown and toothpick comes out clean. (20-30 minutes).

9. Serve cool.
