Mango Muffins

Ingredients
1 1/2 Cup Freeze Dried Mango Chunks*
1 Egg*
1/4 Cup Vegetable Oil
3/4 Cup Buttermilk
1 1/2 Teaspoon Baking Powder
Pinch Salt
3/4 Cup Sugar
1/2 Teaspoon Ground Allspice
1 1/2 Cup Flour
1 Teaspoon Vanilla
1/4-1/2 Cup Sweetened Coconut Flakes (As Desired)

*Reconstitute before using.
Follow directions on #10 can to reconstitute.

Preparation
1. Preheat oven to 375°F.

2. Grease muffin tins.

3. Mash mangos into soft pulp.

4. In a small bowl using a whisk, mix egg with vegetable oil and buttermilk until well-blended.

5. In a large bowl, mix baking powder, salt, sugar, and ground allspice with flour.

6. Add egg, oil, and buttermilk mixture to the flour to form a lumpy batter. Do not overmix.

7. Stir in vanilla, mashed mangos, and coconut.

8. Spoon batter into muffin tins to about 2/3 full.

9. Bake for 22-24 minutes.

-Makes 12-14 muffins.
