Perfect Product!

I don't use celery very much, so when a recipe calls for celery, a lot goes to waste. So I was astonished to see freeze-dried celery at Emergency Essentials some four years ago, and immediately bought a can. I still don't use a lot of celery, but this perfectly suits our needs, because it is shelf-stable (and we keep it sealed in a plastic bag within the open can) and I'm not wasting so much produce anymore. The flavor seems right, and the texture, too, so this has become a pantry staple for us, and has brought us back for other freeze-dried products at Emergency Essentials.

Good for adding flavor

I like these in baked beans and soups. They give a mild flavor but not the same as fresh. It is a grassy flavor, not the crisp flavor and texture of fresh celery, but it does liven things up. Mine never became crispy, the texture is chewy.

Actually crunchy

I got this to use at Thanksgiving instead of chopping 8 bunches of celery by hand. There was still quite a lot left so I've been using it in chicken salad. I had not expected it to rehydrate to be crunchy, but it did. The pieces are very small, which is why it only gets a 4.
