I've had good results from quick potato salad in the past made with instant mashed potatoes, so decided to give the dices a try for the same. They were sooooo easy. No peeling or cutting. I also boiled the egg along with the potatoes, so clean up was a snap. Since the dice size is uniform they cook evenly without any being overdone and mushy. This made really great potato salad. I'll be ordering these again as a staple to keep in my pantry.

These potato dices are great! I've found it is best way to rehydrate them is to soak them overnight. I also soak some onions and the next morning everything is ready for pan fried potatoes.

So nice to keep dehydrated potatoes around. No cleaning or peeling required and super fast to whip up a side dish. No worries that if my fresh potaoes go bad that I have to figure out what to do....I can always turn to my food storage and have potatoes on hand.
