Oatmeal Peanut Butter and Banana Muffins Recipe

INGREDIENTS

Flour
1 C
Instant Oatmeal
1/4 C
Brown Sugar
1 tsp
Baking Powder
1 tsp
Baking Soda
1/4 tsp
Maple Powder or 1 tsp Maple Extract
1 tsp
Salt
1/3 C
Dehydrated Peanut Butter Powder
1 C
Dehydrated Fat-Free Milk
1
Egg (2 Tbsp Whole Egg Powder + 3 Tbsp Water)
2 C
Freeze Dried Banana Slices

PREPARATION

1. Reconstitute the banana according to directions on the can; Drain excess water.

2. In a large bowl, combine flour and oatmeal. Mix brown sugar until no clumps. Add maple powder (if using liquid form add with milk), baking powder, and salt. Mix until well-blended.

3. In another bowl, combine peanut butter, milk (liquid maple flavor (if being used)), egg, and bananas. Mix well.

4. Combine peanut butter mixture with oatmeal mixture until oatmeal mixture is just moistened.

5. Fill muffin tins 2/3 cup full.

6. Sprinkle sugar and cinnamon on top.

7. Bake at 400°F for 20 minutes.
