Mexican Rice (With tomato) Recipe

INGREDIENTS:

1 C
Spicy V-8 juice, ½ cup water
1/2 C
minced onion (or 2 tablespoons reconstituted Emergency Essentials Chopped Onions
1/2 C
minced bell pepper (2 or more colors if possible) or reconstituted Emergency Essentials Red or Green Bell Pepper Dices
1 TBSP
olive oil
3/4 TSP
Emergency Essentials Iodized Salt
1 TSP
Emergency Essentials Chili Powder
1/4 C
your favorite salsa
1 1/2 C
Emergency Essentials Instant White Rice

Directions:

Combine all ingredients (except for rice) in saucepan and bring to a boil. Stir in instant rice, cover and remove from heat. Let sit 7 or 8 minutes, stir, and serve. Top with a little shredded cheese if desired.
