Lime Shrimp Stir-Fry Recipe

INGREDIENTS

Stir Fry:

3 C
Freeze Dried Shrimp, reconstituted
1/4 C
Freeze Dried Green Bell Peppers, reconstituted
1/4 C
Freeze Dried Red Bell Peppers, reconstituted
1/4 C
Freeze Dried Onions, reconstituted
1/2 C
Freeze Dried Mushrooms, reconstituted
1/2 C
Freeze Dried Pineapple, reconstituted
1/2 C
Freeze Dried Green Peas, reconstituted
1 tsp
Minced Garlic, reconstituted
1 tsp
Ginger Powder (ground ginger)
1/2 tsp
Chili Flakes (alternative: 1/4 tsp. Chili Powder, or to taste)
1/2 tsp
Sesame Seeds

Sauce:

2/3 C
Soy Sauce
2 T
Water
1/4 C
White Vinegar
1/4 C
Lime Juice
1 T
Olive Oil
2 T
Cornstarch

PREPARATION

  1. Sautee garlic in olive oil until golden, then add onions and ginger, stirring occasionally until onions are softened.
  2. Add remaining stir fry ingredients and cook until heated through.
  3. Meanwhile, combine the ingredients for sauce.
  4. Once the veggies and shrimp are ready, pour in sauce and heat for about a minute, or until the sauce is warm.
  5. Serve immediately over hot rice.
