Recipe:

Mung beans are small, greenish beans which we most often associate with the popular “bean sprouts” of many Asian dishes, but they are sweet, protein-packed legumes in themselves, and—shall we say—less “gassy” than many of their relatives. If your supermarket doesn’t carry them, check whole foods markets, worldwide food markets, or health food stores.

Mung beans (dry)
1 C
[white rice] (Basmati is excellent)
1/2 C
soybean oil
8 C
water
1/2 C
soy sauce
3 TBSP
whole yellow mustard seed
1 TBSP
[basil], ground turmeric, whole coriander seed, and cumin
1 TSP
cayenne pepper, [black pepper], fenugreek, and powdered [oregano]
1 C
plain yogurt
1 C
Mango chutney (purchased, or see recipe below)

DIRECTIONS:

  1. Boil water and mix in the rest of the ingredients except yogurt and chutney.
  2. Bring to a second boil, then reduce heat and simmer until the mixture has reached a chili-like consistency.
  3. Spoon into serving bowls and spread a stripe of yogurt and one of chutney across the top, like an “equals” sign.

INGREDIENTS:

ripe (but not overripe) mangos
1
fresh peach
1/2 C
sugar
1 TBSP
chopped fresh ginger root
1 TSP
cinnamon
1/4 TSP
ground cloves
1 TBSP
coriander seeds
1 TBSP
white vinegar
1/4 C
water

DIRECTIONS:

  1. Peel and chunk mangos and peach. Place in a small saucepan.
  2. Add other ingredients. If you do not like seeds in your chutney, you can make a small bouquet garni bundle of cheesecloth tied with string, including the coriander seeds, ½ teaspoon whole cloves, and ½ broken cinnamon stick and place that in the mixture while it cooks. Soak it first in the ¼ cup water and use that water in the mixture.
  3. Stir well and let simmer over medium-low heat, stirring often to prevent scorching. Add a little more water as needed. It’s done when the fruit is tender and flavors are blended.

Note: You could substitute rehydrated FD mango and peach dices for fresh fruit if desired.
