Curried Lentils with Rice

INGREDIENTS:

2 cups
cooked lentils, with at least 1/2 cup of water remaining
¼ cup
FD Onions
½ cup
FD Carrot dices
1 cup
FD Tomatoes
½ teaspoon
Minced Garlic
2 cups
chicken-flavored broth
½ cup
“rich” milk—3 tablespoons powdered milk mixed with ½ cup water
2 tablespoons
sour cream powder
1 teaspoon (or more)
curry powder—to taste
Hot cooked rice




DIRECTIONS:

  1. Reconstitute the onions, carrot dices, and tomatoes.
  2. Mix the 2 cups of chicken-flavored broth, using only half the recommended amount of powder
  3. Heat the lentils through, adding broth and vegetables and stirring well. Allow to cook until the liquid is reduced by about half.
  4. Add garlic and curry powder. (You may want to start with a little curry powder, taste, and add more according to your preference and the pungency of the brand you’re using.)
  5. Before serving, add milk and sour cream powder and mix well. Taste for seasoning.
  6. Serve over hot, cooked rice.
