Broccoli Cheese Soup Recipe

INGREDIENTS

1/2 C
Butter or Clarified Butter
1/4 C
White Flour
2 C
Dehydrated Fat-Free Milk
2 tsp
Salt
2 tsp
Chicken Broth
1 tsp
Dry Mustard
1/2 tsp
Pepper
4 1/2 C
Freeze Dried Potato Dices
2 C
Dehydrated Carrots
1 1/2 C
Freeze Dried Celery
1 C
Freeze Dried Onion
1 1/2 C
Freeze Dried Broccoli
2 C
Dehydrated Cheese Blend

PREPARATION

1. Reconstitute vegetables and cheddar cheese; Drain excess water. Melt butter with flour to make a Roux.

2. Stir in milk, then broth and other seasonings to butter mixture.

3. As sauce thickens, blend in cheese sauce and vegetables and simmer on a low heat until cheese melts into sauce.

Very good and easy recipe

I decided that we should try and live off our food storage for a month to test to see if if I have everything I need when the time comes when we do have to use it. This was one of the first recipes in that month-long test. Making this soup was really easy, because most of the prep work is done for you, with the exception of rehydrating the vegetables, and of course, that's just adding hot water and allowing it to sit for a few minutes. I halved the amount of salt that the recipe called for as 2 teaspoons seemed excessive and it was perfect for us. This soup is delicious. It's very creamy and extremely filling. I served it with Spam and cheese grilled sandwichs and we were full for hours. I will make this again, as it was easy and we enjoyed the soup. It makes quite a bit, so it would be great for an average family and still have leftovers for another meal.
