Scalloped Celery Recipe

INGREDIENTS

4 C
Freeze Dried Celery
6 Tbsp
Butter, Margarine or Clarified Butter
3 Tbsp
All-Purpose Flour
1/2 tsp
Salt
1 C
Dehydrated Fat-Free Milk
1/2 C
Freeze Dried Mushroom
2 Tbsp
Freeze Dried Green Pepper
2 Tbsp
Diced Pimentos
1 C
Freeze Dried Cheddar Cheese
2 C
Soft Bread Crumbs

PREPARATION

1. Rehydrate ingredients according to directions on cans; Drain excess water.

2. In a large skillet, saute celery in 4 Tbsp of butter until tender (5 minutes). Remove celery with slotted spoon and set aside.

3. Stir flour and salt in skillet until smooth, Gradually add milk, Bring to boil. Cook and stir 2 minutes.

4. Add mushrooms, green peppers, pimentos, and cheese. Stir until cheese is melted.

5. Return celery to pan; Stir to coat. Pour into greased 1-quart baking dish.

6. Melt remaining butter; Toss with bread crumbs. Sprinkle over celery mixture. Bake, uncovered, at 350°F for 20-25 minutes or until bubbly.
