Cheddar Potato Fritatta Recipe

INGREDIENTS

1 1/2 C
Freeze Dried Potato Dices
1 tsp
Clarified Butter
1 C
Chopped Freeze Dried Tomato Chunks
1/4 C
Freeze Dried Green Onion
1/2 tsp
Pepper
1/4 tsp
Salt
1 1/2 C
Dehydrated Scrambled Egg Mix
1/2 C
Freeze Dried Cheddar Cheese

PREPARATION

1. Rehydrate potatoes, tomatoes, green onions and scrambled eggs according to directions on cans.

2. Add clarified butter to a non-stick pan. Place over medium-high heat until hot.

3. Add potato, tomato, green onion, pepper and salt; Saute until onion is tender.

4. Once onions are tender, add eggs over vegetable mixture.

5. Cover; Cook over medium-low heat for 15 minutes until sets.

6. Sprinkle with cheddar cheese; Cover and cook for a couple of minutes or until cheese is melted.

7. Cut into wedges and serve at once.
