Split Pea Soup with Ham Recipe

INGREDIENTS

2 C
Dehydrated Split Peas
8 C
Water
2 C
Dehydrated Diced Carrots
2 C
Freeze Dried Diced Onion
1 Tbsp
Minced Garlic
1 C
Freeze Dried Celery
1/2 C
Freeze Dried Ham
3 Tbsp
Dried Oregano
1/2 tsp
Grated Fresh Ginger or 1/8 tsp Dried Ginger
2 Dashes
Hot Pepper Sauce

PREPARATION

1. In a large saucepan, add water and bring peas, carrots, onions, garlic, celery and ham to rapid boil over medium-high heat.

2. Reduce heat and cook, covered at a gently rolling boil until peas are soft.

3. Add soy sauce, oregano, ginger, and hot pepper sauce.

4. Simmer 10 minutes to blend flavors.

5. Process 2-3 cups of mixture at a time in a blender or hand blender until pureed.

6. Reheat in saucepan if necessary. Serve hot.

Needs adjustments

I followed instructions, using 8 cups water. When I checked it, the carrots and split peas had absorbed almost all the water and it was one big mass. I continued to add water until I finally got up to 20 cups before having a thick 'flow' to the soup. I think there may been too many carrots but after adding all this water, it was fine. I did add dry vegan chicken stock base to give it more flavor. I would suggest making half this amount of ingredients with 10 cups of water and you would still have plenty!
