Buttermilk Pancakes with Blackberry Sauce

1 2/3 Cup
Provident Pantry Buttermilk Pancake Mix
1/2 Cup
Water
2 Tbsp
Provident Pantry White Sugar
1 tsp
My Choice Vanilla Powder
1/4 Tbsp
Lemon Juice

Blackberry Sauce

1 1/2 Cup
Provident Pantry Freeze-Dried Organic Blackberries
3/4 Cup
Provident Pantry White Sugar
1 1/2 Tbsp
MyChoice Cornstarch
1 Tbsp
Cold Water
Water from reconstituted Blackberries




Preparation:

  1. Make Pancake mix according to directions on the can. Stir sugar, vanilla powder, and lemon juice into the batter until its smooth.
  2. Cook pancakes on a griddle or pan.
  3. In a separate bowl, reconstitute blackberries for sauce. Drain blackberries by placing a colander on top of a bowl. Save the excess water form the blackberries. Set water and blackberries aside.
  4. In another bowl, mix sugar, cornstarch and water.
  5. Put reconstituted blackberries into a sauce pan on the stove. Use a potato masher or spoon to smash blackberries.
  6. Add the sugar and cornstarch mixture from step four into smashed blackberries.
  7. Stir on low heat until smooth.
  8. Add water from the reconstituted blackberries into the sauce to strengthen the blackberry taste and to thin the sauce.
  9. Pour sauce over pancakes
