Blueberry Cornbread Recipe


1 3/4 C
Yellow Cornmeal
1 1/4 C
All-purpose Flour
1 Tbsp
Baking Powder
1/2 tsp
1 1/4 C
Freeze Dried Blueberries
1/3 C
2 Large
Eggs (4 Tbsp Whole Egg Powder + 6 Tbsp Water)
4 Tbsp
Clarified Butter
1 1/2 C


1. Butter and lightly flour a 13" x 9" baking dish and preheat oven to 425°F.

2. Combine cornmeal, flour, baking powder, and salt in a large bowl.

3. Sprinkle 2-3 tablespoon of dry ingredients over blueberries and toss lightly.

4. Stir sugar into dry mixture, then stir in eggs, butter, and milk. Add blueberries and mix lightly.

5. Turn into prepared pan and bake for 25-30 minutes.

6. Cool for about 10 minutes and cut into squares.
