Authentic San Antonio Tex-Mex Chili Recipe

INGREDIENTS:

3 TBSP
Melted Lard
3/4 TSP
dried Mexican oregano or Emergency Essentials Mediterranean Oregano
3 lbs.
coarse ground beef or 4 cups Emergency Essentials FD Ground Beef
1 TSP
ground cumin
1 1/2 TSP
Emergency Essentials Iodized Salt
4-6 TBSP
Emergency Essentials Chili Powder
1 TSP
Emergency Essentials Mesh Black Pepper
6 C
beef broth or Emergency Essentials Vegetarian Beef Flavored Broth
3 TBSP
finely-chopped onion or reconstituted Emergency Essentials Chopped Onions
4 TBSP
Emergency Essentials White Flour
2 TSP
Emergency Essentials Minced Garlic

DIRECTIONS:

  1. Brown the beef in the hot melted lard in a heavy pot such as a Dutch oven until water cooks out and beef sizzles, stirring often.
  2. Add onion, garlic, oregano, and cumin and stir until onion has softened.
  3. Add chili powder and mix well.
  4. Whisk flour into 1 cup beef broth until there are no lumps, and then whisk that mixture into the rest of the broth.
  5. Add to meat mixture, enough to cover the meat. Bring to a boil, and then reduce heat to barely simmering. Stir often to prevent scorching. Cook about 30 minutes until beef is tender. Add more broth or water if chili becomes too thick for your preference.
  6. Taste for seasonings and adjust. Serve with crackers and a side of beans or as a sauce for enchiladas or tamales.
